This one-pot wonder is perfect for family gatherings and pairs great with some crusty bread and a sprinkle of fresh coriander. Grab a bowl and enjoy every comforting bite!

Tips for Success

Soak the red beans overnight before cooking to reduce cooking time and improve digestibility. This will help the beans cook evenly and become tender without overcooking the chicken.

When browning the chicken, do it in batches to avoid overcrowding the pan. This ensures a nice sear on the chicken, which adds depth of flavor to the stew.

Be cautious with the amount of salt you add, especially if the chouriço is salty. Taste as you go to avoid over-salting the stew, which can mask the other flavors.

Frequently Asked Questions

Can I use canned beans instead of soaking and cooking dried beans?

Yes, you can use canned beans. Rinse and drain them, then add them to the stew after the chicken and tomatoes have cooked. Reduce the cooking time as the canned beans are already cooked.

What can I substitute for chouriço if it's not available?

You can substitute chouriço with other types of smoked sausages, such as Spanish chorizo, Andouille sausage, or even kielbasa. For a vegetarian option, use vegetarian sausage or omit it entirely and add extra spices for flavor.

How should I store leftovers of the stew?

Store leftovers in an airtight container in the refrigerator for up to 3-4 days. You can also freeze the stew for up to 3 months. Reheat thoroughly before serving.

Recommended Drink Pairings

  • Chardonnay: Its crisp acidity and fruity notes complement the richness of the stew.
  • Red Sangria: The fruity and refreshing elements balance the savory flavors of the dish.
  • Sparkling Water: The bubbles cleanse the palate and enhance the meal's flavors.
  • Black Coffee: The bitterness contrasts nicely with the stew's richness, providing a nice finish.
  • Mint Tea: Its refreshing qualities can provide a nice contrast to the hearty stew.
