  2. Once cooked, remove the beans and using the bean broth, cook the pork, the black pudding and the chouriço sausage.
  3. Stir in the chopped garlic, onions, carrots, bacon, parsley and bay leaves.
  4. When done, add the olive oil, wine, the roughly chopped tomatoes and the tomato paste and let it cook a little.
  5. Finally, add the stock, the chopped meat and the beans.
  6. On very low heat, let it reach the boiling point.
  7. Check the salt, turn off the heat and serve reheated after about one hour.

Recipe Tips

Soaking the butter beans overnight is crucial. If you're short on time, consider a quick-soak method by boiling the beans for 5 minutes, then letting them sit covered for an hour before cooking.
When browning the pork, ensure that the pieces are not overcrowded in the pan. This allows for proper caramelization and enhances the overall flavor of the stew. Cook in batches if necessary.
Be cautious with salt, especially since the chouriço and bacon can be quite salty. Start with a small amount and taste as you go to avoid over-salting the dish.

Frequently Asked Questions

What can I substitute for butter beans if I can't find them?

You can substitute butter beans with great northern beans, cannellini beans, or navy beans. These beans have a similar texture and flavor profile, making them suitable alternatives for this stew.

How should I store leftovers of the bean stew?

To store leftovers, allow the stew to cool completely, then transfer it to an airtight container. It can be refrigerated for up to 3-4 days, or frozen for up to 3 months. To reheat, simply warm it on the stove over low heat until heated through.

What if the stew is too salty after seasoning?

If your stew turns out too salty, you can balance the flavor by adding additional liquid such as water or low-sodium broth. Alternatively, adding diced potatoes can absorb some of the saltiness; just cook the stew a little longer to ensure the potatoes are tender.

Recommended Drink Pairings

Wine

Portuguese: Vinho Verde - This light and refreshing wine complements the richness of the stew while cutting through the fat of the pork and chouriço.

General: Sauvignon Blanc - Its crisp acidity and citrus notes will enhance the flavors of the beans and vegetables in the stew.

Beer

Portuguese: Super Bock - A classic lager that pairs well with the hearty and savory elements of the stew.

General: Pale Ale - The balanced bitterness and hoppy flavor of a pale ale will complement the richness of the pork and spices in the dish.

Other Beverages

Espresso: A strong coffee that provides a robust finish to the meal, balancing the rich flavors of the stew.
