Ingredients

3 cod slices4 cloves of garlic1 medium onion1 bay leaf150 grams of canned tomatoes100 grams of red pepper100 grams of green pepperOlive oil (to taste)2 cups of rice3 cups of water3 cups of seafood brothParsley (to taste)Salt (to taste)

With all your ingredients and equipment gathered, you are ready to get started!

Directions

  1.  In a clay pot with the olive oil, sauté the chopped onion, chopped garlic and bay leaf for 5 minutes.
  2. Add the tomatoes and chopped peppers cut into cubes and sauté for another 5 minutes.
  3. Add the 3 cups of water and the 3 cups of broth.
  4. Let it boil and add the rice.
  5. Check the seasoning.
  6. Add the cod to the pot and place it in a preheated oven at 180 °C or 350 °F, bake for 15 minutes or until the rice is cooked.
  7. When its done, garnish with parsley and serve.

Recipe Tips

To enhance the flavor of the cod, soak it in water for about 30 minutes before cooking to remove excess salt, especially if using salt cod. This will give you a more balanced dish without overwhelming saltiness.
Avoid overcooking the rice by following the cooking times closely. Once you add the rice to the broth and water, stir it gently once and then cover the pot without lifting the lid until the rice is done. This helps to retain steam and moisture, ensuring perfectly cooked rice.
When sautéing the garlic and onion, do not let them brown too much as this can create a bitter taste. Cook them on medium heat until just translucent before adding the peppers and tomatoes for a sweeter flavor profile.

What happens if u don't have a clay pot??

Do u have a recipe for cod w/chick peas..not the cod fish com sa'. They have one at the inner bay that u get the chick peas and rhen put the fish mixture on top
