Recipe Tips

When preparing the stuffing for the cornbread, ensure the onion and garlic are sautéed until translucent before mixing them with the cod. This enhances the flavor profile and prevents the stuffing from being too raw or pungent.
To add depth to the stuffing, consider incorporating a splash of white wine or lemon juice after sautéing the vegetables, then let it reduce slightly before adding the cod. This will brighten the flavors and complement the fish beautifully.
Avoid overcooking the cod loins; they should be cooked just until they flake easily with a fork. Overcooking can lead to a dry stuffing, so check the cod for doneness after about 10 minutes of cooking time.
