Ingredients

250 g (8.8 oz) cooked butter beans3 large turnip heads, sliced1 medium onion, diced30 ml (2 tbsp) olive oil2 bay leaves1 medium ripe tomato, seeded and chopped1 sprig of parsley, chopped5 g (1 tsp) sweet paprika50 g (1.8 oz) smoked bacon, cubed10 slices of chouriçoSalt to taste500 ml (2 cups) water or as needed

Directions

  1. Over medium heat, add olive oil to a pan, add the slices of chouriço and the smoked bacon cut into cubes and let it fry briefly before adding the onion.
  2. When the onion begins to brown add the peeled tomato seeded and cut into small pieces, bay leaves, the chopped parsley and paprika.
  3. Cook until the tomatoes dissolve into a rich, fragrant sauce.
  4. Add the butter beans and water to the pan.
  5. Add the sliced turnip heads and salt, then simmer over low heat until the turnips are perfectly tender.
  6. Serve right away while steaming and flavorful.
