Ingredients

1 kg (2.2 lbs) of small fresh sardines6 cloves of garlic, finely chopped60 ml (1/4 cup) of high-quality olive oil, plus extra to taste5 g (1 tsp) of ground black pepper, to taste2 dried bay leaves, crushed15 g (1 tbsp) of coarse sea salt, to taste60 g (1/2 cup) of wheat flour, for light dusting15 ml (1 tbsp) of white wine vinegar, to taste

Directions

  1. Clean the sardines thoroughly, rub them generously with coarse salt, and let them rest for 30 to 40 minutes to firm up the flesh.
  2. Run the salted sardines under cold water to rinse off the excess salt and drain them perfectly dry.
  3. Transfer the drained sardines through the wheat flour to lightly coat them and lay them flat side-by-side on a baking tray.
  4. Drizzle the fish with your best olive oil and a few drops of vinegar, then sprinkle them evenly with ground pepper, chopped garlic, and the crushed bay leaves.
  5. Bake in a preheated oven at 190 C (375 F) for 15 to 20 minutes until the skins are beautifully blistered and golden brown.
  6. Serve immediately right out of the oven alongside a vibrant fresh salad or a comforting bowl of hot tomato rice.
