Ingredients

4 cod loins (approx. 700g / 1.5 lbs)4 medium sized potatoes (approx. 800g / 1.75 lbs)1 head of garlicOlive oil to tasteGround pepper to tasteSalt to taste

Directions

  1. Cook the potatoes with the skin in water and salt.
  2. Once cooked remove the skin and cut them in half.
  3. Place the cod loins on baking pan, add the potatoes and cloves of garlic cut in half.
  4. Add pepper and drizzle with plenty of olive oil.
  5. Bake in a pre-heated oven at 180°C or 350°F for 25-30 minutes.
  6. Serve with mixed salad.
