With all your ingredients and equipment gathered, you are ready to get started!

Directions

  1. In a heavy 10-12 inch skillet, melt the butter and olive oil over medium heat.
  2. When the foam begins to subside, add the potatoes.
  3. Turn them frequently with a metal spatula, cook for 15 minutes or until they are tender and golden brown.
  4. Season with salt and black pepper, transfer to a heated bowl or platter, sprinkle with parsley and serve at once.

Recipe Tips

To achieve perfectly crispy potato rounds, ensure that the oil and butter mixture is hot before adding the potato slices. Test the temperature by dropping a small piece of potato into the pan; it should sizzle immediately.
Avoid overcrowding the pan when frying the potato rounds. Fry in batches if necessary, as this allows each round to cook evenly and get crispy without steaming.
For added flavor, consider seasoning the potato rounds with garlic powder or smoked paprika along with the salt before frying. This will enhance the overall taste without overpowering the parsley.

Frequently Asked Questions

Can I use a different type of oil instead of olive oil?

Yes, you can use other oils such as vegetable oil, canola oil, or even coconut oil. Each will impart a slightly different flavor, but they will all work well for frying the potatoes.

How should I store leftover fried potato rounds?

Store leftover fried potato rounds in an airtight container in the refrigerator for up to 3 days. To reheat, place them in a skillet over medium heat for a few minutes until heated through, or bake them in the oven at 350°F (175°C) until warm and crispy.

What can I do if my potato rounds are not browning?

If your potato rounds are not browning, make sure the heat is high enough and that you're not crowding the pan, as this can trap steam and prevent crisping. You can also try increasing the cooking time slightly and ensure that the potatoes are dry before adding them to the skillet.

Recommended Drink Pairings

Wine

Portuguese: Vinho Verde - This light and refreshing wine complements the buttery, herbaceous notes of the fried potato rounds beautifully.

General: Sauvignon Blanc - The crisp acidity and citrus notes of Sauvignon Blanc enhance the flavors of the potatoes and parsley.

Beer

Portuguese: Super Bock - This popular lager has a clean, crisp taste that pairs well with the richness of fried potatoes.

General: Pilsner - A classic Pilsner offers a refreshing balance that cuts through the fat of the fried potatoes.

Other Beverages

Herbal Tea: A light herbal tea, such as chamomile or mint, provides a soothing contrast to the savory flavors of the dish.

It is much easier to do these if you bake the potatoes in the microwave ahead of time and allow them to cool.
