With all your ingredients and equipment gathered, you are ready to get started!

Directions

  1. Before doing this recipe, you must first soak the cod for 24 to 48 hours, changing the water 3-4 times during that period.
  2. Boil the cod for about 20 minutes, remove bone and de-flake it.
  3. Shred the cod with your hands into small pieces.
  4. Mix the cornflour with the egg yolks in a bowl.
  5. Add the lemon juice, chopped parsley, and the stiffly beaten egg whites.
  6. Add the cod  to the batter, mix well and mold/form into small cakes.
  7. Fry in olive oil in a saucepan on high heat until they are golden.

Recipe Tips

Ensure to soak the bacalhau in cold water for at least 24 hours, changing the water several times, to remove excess salt and rehydrate the fish properly before cooking.
For a lighter texture, whip the egg whites to stiff peaks before folding them into the mixture. This will create a fluffier cake and help it hold together better during frying.
Avoid overcrowding the frying pan when cooking the cod cakes; this can lower the oil temperature and result in soggy cakes. Fry in batches if necessary, ensuring each cake has enough space to crisp up nicely.

Frequently Asked Questions

What can I use instead of bacalhau (salted cod)?

If you can't find bacalhau, you can use fresh cod or any white fish like tilapia or haddock. Note that the soaking step is not needed for fresh fish.

How can I store leftover fried cod cakes?

Store leftover fried cod cakes in an airtight container in the refrigerator for up to 3 days. You can reheat them in a skillet over medium heat or in an oven to maintain their crispiness.

What should I do if my cod cakes are falling apart while frying?

If the cod cakes are falling apart, try adding a bit more corn flour or another egg yolk to the mixture to help bind them together. Ensure the oil is hot enough before frying to create a crust quickly.

Recommended Drink Pairings

Wine

Portuguese: Vinho Verde - This light and refreshing wine complements the salty richness of the cod with its crisp acidity and citrus notes.

General: Sauvignon Blanc - The bright acidity and herbal undertones of Sauvignon Blanc enhance the flavors of the cod and parsley in the cakes.

Beer

Portuguese: Super Bock - This popular lager has a light body and crisp finish that pairs well with the fried cod cakes without overshadowing their delicate flavors.

General: Pilsner - A classic Pilsner offers a refreshing balance to the richness of the fried cakes, making it an excellent choice for this dish.

Other Beverages

Lemonade: The bright and zesty flavors of lemonade will complement the lemon juice in the cod cakes, enhancing their overall freshness.

Great recipe and Gluten free also!
I think it would also work with a large can [15oz] of pink salmon, which would make it easier without the soaking.
