Recipe Tips

When peeling and deveining shrimp, make sure to leave the tails on for a more visually appealing presentation. This also makes them easier to handle while eating.
For an enhanced flavor profile, marinate the shrimp in a mixture of olive oil, minced garlic, and a splash of port wine for at least 30 minutes before cooking. This will infuse the shrimp with deeper flavors.
Avoid overcooking the shrimp; they should only take 2-3 minutes per side on medium-high heat. Overcooked shrimp become rubbery, so remove them from the heat as soon as they turn opaque and curl slightly.

Frequently Asked Questions

Can I substitute the port wine with something else?

Yes, you can substitute port wine with red wine or even a non-alcoholic option like grape juice or a mixture of vinegar and water for a tangy flavor. However, note that this may alter the final taste of the dish.

How should I store leftovers of the shrimp with port wine?

Leftovers can be stored in an airtight container in the refrigerator for up to 2 days. To reheat, gently warm them in a skillet over low heat, adding a splash of water or broth to maintain moisture.

What can I do if my sauce is too thin?

If your sauce is too thin, you can thicken it by simmering it longer to reduce it, or you can mix a small amount of cornstarch with cold water to create a slurry and stir it into the sauce while cooking.

Recommended Drink Pairings

Wine

Portuguese: Tawny Port - The nutty and caramelized flavors of Tawny Port complement the sweetness of shrimp and pineapple beautifully.

General: Riesling - A slightly off-dry Riesling balances the sweetness of the honey and pineapple while enhancing the dish's tropical notes.

Beer

Portuguese: Super Bock - This light lager offers a refreshing contrast to the richness of the dish and the sweetness of the sauce.

General: Pilsner - A crisp and clean Pilsner pairs well with the shrimp, cutting through the richness without overpowering the flavors.

Other Beverages

Coffee: A light, fruity coffee can provide a nice contrast to the dish, enhancing the overall dining experience with its acidity and aromatic profile.
