Directions

  1. Saute onions, garlic and bay leaf in olive oil for few minutes. Add the tomato and chopped carrots and cook for about 3 minutes stirring often.
  2. Add the all of the remaining ingredients except pasta sliced carrots and parsley. Bring to a boil and cook for about 5 minutes. Add the macaroni and sliced carrots and cook on medium for about  15 – 20 minutes until pasta is cooked.
  3. Taste the soup for saltiness and add more if desired. Take soup off heat and let it sit to thicken. Add more broth if you like your soup thinner. Garnish with parsley and a little drizzle of olive oil.

Recipe Tips

To enhance the flavor of the soup, sauté the minced onion and garlic in olive oil until they are translucent and fragrant before adding the other ingredients. This step builds a strong flavor base for the soup.
Avoid overcooking the green beans by adding them towards the last 10 minutes of cooking. This ensures they remain vibrant and retain their nutrients, providing a better texture and color to the soup.
For a creamier texture, consider adding a splash of heavy cream or a dollop of Greek yogurt just before serving. This adds richness without compromising the healthiness of the soup.

Frequently Asked Questions

Can I substitute green beans with another vegetable?

Yes, you can substitute green beans with snap peas, asparagus, or even broccoli for a different flavor profile. Just adjust the cooking time accordingly to ensure the vegetables are tender.

How should I store leftover green bean soup?

Store any leftover green bean soup in an airtight container in the refrigerator for up to 3-4 days. You can also freeze the soup for up to 3 months; just ensure to leave out the pasta before freezing as it can become mushy when reheated.

What can I do if my soup is too salty?

If the soup is too salty, try adding more water or low-sodium broth to dilute the saltiness. Additionally, you can add diced potatoes or another starchy vegetable which will absorb some of the saltiness.

Recommended Drink Pairings

Wine

Portuguese: Vinho Verde - This light and crisp wine complements the freshness of the green beans and herbs in the soup.

General: Sauvignon Blanc - The bright acidity and herbal notes of Sauvignon Blanc enhance the flavors of the vegetables in the soup.

Beer

Portuguese: Super Bock - This lager's refreshing quality and mild bitterness make it a great match for the soup's lightness.

General: Pale Ale - A balanced Pale Ale provides a hoppy yet smooth profile that pairs well with the vegetable flavors.

Other Beverages

Lemonade: The bright citrus notes of lemonade add a refreshing contrast to the savory elements of the soup.
