45 min 4 servings Easy Prep time 10 min Cooking Time 35 min

Ingredients

3 pounds of small potatoes, finely sliced1 tablespoon of salt2 large onions, thinly sliced4 cloves of garlic, chopped1 jar of roasted red peppers3 tablespoons of olive oil1 (8 ounce) package of shredded cheddar or your favorite cheeseSalt and pepper (to taste)

Directions

  1. Cook the potatoes in boiling water with the salt for about 10 minutes, drain and set aside. Note: The potatoes are thin so they may cook faster. Don’t over cook or they will fall apart.
  2. Cook the onions and garlic in a medium heaving skillet with 2 tablespoons of the olive oil for about 5 minutes until translucent.
  3. Drain the roasted peppers from the jar and slice them into your desired size. Add them to the onions and garlic to heat them through.
  4. Grease a medium oven safe deep dish with the remaining olive oil. Begin layering first with half of the potatoes, then top evenly with 1/2 of the onions and 1/2 of cheese.
  5. Add salt and pepper between layers if desired. Finish the remaining layer and top with the rest of cheese.
  6. Bake uncovered at 350 degrees for about 20 minutes until the cheese is melted and golden.

Frequently Asked Questions

What can I substitute for cheddar cheese in this recipe?

You can use any cheese that melts well, such as mozzarella, gouda, or fontina. For a dairy-free option, consider using a vegan cheese alternative that melts similarly.

How should I store leftover scalloped potatoes?

Store any leftovers in an airtight container in the refrigerator for up to 3-4 days. To reheat, place in the oven at 350°F until warmed through, or microwave in short intervals, stirring occasionally.

What if my potatoes are too soft after boiling?

If your potatoes are too soft and falling apart, try reducing the boiling time to just 5 minutes. Thinly sliced potatoes cook quickly, and it's crucial to monitor them closely to prevent overcooking.

Recommended Drink Pairings

Wine

Portuguese: Vinho Verde - This light and refreshing wine with its bright acidity complements the creamy texture of the scalloped potatoes and balances the richness of the cheese.

General: Chardonnay - A lightly oaked Chardonnay offers a nice creaminess that pairs well with the cheese, while its citrus notes enhance the flavors of the peppers and garlic.

Beer

Portuguese: Super Bock - This lager's crisp and refreshing profile provides a nice contrast to the richness of the dish, making it a delightful pairing.

General: Pilsner - A classic Pilsner offers a clean and light flavor that complements the savory elements of the scalloped potatoes without overwhelming them.

Other Beverages

Sparkling Water: The effervescence of sparkling water cleanses the palate, making it an excellent choice to refresh between bites of the rich dish.
