Recipe Tips

To enhance the flavor of the dish, sauté the garlic and chouriço in olive oil until fragrant and the chouriço is slightly crispy before adding the tomatoes. This will infuse the oil and the tomatoes with rich, savory flavors.
If you prefer a creamier texture for the baked eggs, consider whisking the eggs with a splash of milk or cream before adding them to the pan. This will create a custard-like consistency when baked.
Avoid overcooking the eggs by checking for doneness around the 10-minute mark. The eggs should be just set but still slightly jiggly in the center; they will continue to cook from residual heat once removed from the oven.
