Ingredients
4 tablespoons of olive oil4 garlic cloves, minced1 onion, chopped1 tablespoon of paprika1 lbs. of beef, cut into cubes1 tablespoon of vinegar2 cups of vegetable broth6 yams, deskinned and cut in half1.5 tablespoons of watercress, choppedSalt and pepper (to taste)

Preparation
- In a saucepan, add the olive oil, garlic, onion, paprika, beef and sauté them, stirring well.
- Once the beef has browned a bit add the vinegar, vegetable broth, and yams. Season with salt and pepper to taste
- Close the pan and place over high heat. When it starts boiling, turn the heat to medium and let it cook for about 20-25 minutes until the beef and yams are both tender.
- Once they are done, remove from the heat and let it cool for about 5 minutes. Pour into a platter, cover with the chopped watercress, and serve while hot.

Should one assume that these are truly yams and not what we in the US call yams which are really sweet potatoes? I would think a great substitute would be plain old potatoes.
