Recipe Tips

For perfectly crispy fries, soak the thinly sliced potatoes in cold water for at least 30 minutes before frying. This removes excess starch and helps achieve a better texture.
When frying the chouriço, do so over medium heat to allow the fat to render slowly, which enhances the flavor. Avoid high heat, as it can burn the meat and affect the dish's overall taste.
Add the eggs to the pan only after the chouriço has cooked and rendered its fat. This ensures that the eggs get infused with the flavors of the chouriço while preventing them from overcooking.

Frequently Asked Questions

What can I substitute for chouriço if I can't find it?

You can replace chouriço with other types of spicy sausage such as chorizo, pepperoni, or even a smoked sausage. If you're looking for a vegetarian option, try using tempeh or seitan seasoned with smoked paprika.

How do I store leftovers from this recipe?

Store any leftover fried eggs, chouriço, and fries in an airtight container in the refrigerator for up to 2 days. To reheat, place them in a skillet over medium heat until warmed through to maintain the best texture.

What should I do if my fries don't turn out crispy?

If your fries aren't crispy, make sure the oil is hot enough before frying (around 350°F/175°C). Additionally, avoid overcrowding the skillet while frying, as this can lower the oil temperature. You can also try double frying—first fry until cooked, then let them sit to cool, and fry again until golden and crispy.

Recommended Drink Pairings

Wine

Portuguese: Vinho Verde - This light and refreshing wine complements the richness of chouriço while cutting through the oiliness of the fried eggs.

General: Sauvignon Blanc - The crisp acidity and citrus notes of Sauvignon Blanc pair well with the savory flavors of the dish.

Beer

Portuguese: Super Bock - This popular lager has a balanced flavor that complements the fried elements of the dish without overpowering them.

General: Pilsner - A classic Pilsner offers a refreshing and crisp profile that works beautifully with the richness of the chouriço and eggs.

Other Beverages

Coffee: A rich, bold coffee adds a delightful contrast to the dish's savory profile, enhancing the overall experience.
