Directions

  1. Heat the water and dissolve the fish cube. Set fish stock aside. In a small pan, fry the onion and garlic in the olive oil. Add the tomatoes and cook for 10 minutes. Add the mustard, fish stock, white wine and mix. Add mushrooms and let cook 10 minutes. Pre-heat the oven at 375°F. Add the coriander to the sauce, mix and remove from heat. Taste and if necessary season with salt and pepper.
  2. Grease a ovenproof dish with some olive oil and spread some sauce on the bottom of the dish. Lay the fish fillets on top and cover with remaining sauce. Pour the butter over the fish and place in the oven for about 20 minutes until fish is cooked and sauce thickens a bit.

Recipe Tips

To enhance the flavor of your dish, consider marinating the fish fillets in a mixture of olive oil, garlic, and a splash of white wine for at least 30 minutes before baking. This will help the fish absorb more flavor and remain moist during cooking.
When adding the sliced mushrooms, sauté them first in a little bit of olive oil or butter until they are golden brown and have released their moisture. This step prevents them from becoming rubbery in the final dish and adds a deeper umami flavor.
Be cautious with the salt when adding the fish stock cube, as it can be quite salty. Taste the sauce before adding additional salt and pepper, and adjust only if necessary to avoid over-seasoning the dish.

Frequently Asked Questions

What can I substitute for white wine in this recipe?

You can substitute the white wine with an equal amount of chicken broth, vegetable broth, or a mixture of equal parts apple cider vinegar and water, which will add some acidity without the alcohol.

How should I store leftover baked fish fillets?

Store any leftover baked fish fillets in an airtight container in the refrigerator for up to 2 days. Reheat in the oven at a low temperature or in the microwave until warmed through.

What should I do if the sauce is too thin after cooking?

If the sauce is too thin, you can thicken it by simmering it on the stove for an additional 5-10 minutes until it reduces and thickens, or you can mix a little cornstarch with cold water and stir into the sauce while it cooks.

Recommended Drink Pairings

Beer

Portuguese: Super Bock - A classic lager that offers a clean finish, making it a great match for the baked fish and creamy mushroom sauce.

Other Beverages

Green Tea: Its subtle bitterness and herbal notes can provide a soothing contrast to the richness of the dish, enhancing the overall dining experience.
