Why You Will Love This Recipe

Get ready to dive into a tropical treat with these pineapple kisses! This simple recipe combines fresh pineapple and sugar for a sweet, chewy bite, with a refreshing hint of mint. They're perfect for sharing or just enjoying yourself. Make these little delights and let your taste buds enjoy a mini vacation to paradise!

Tips for Success

Ensure the pineapple is very finely chopped; larger chunks can result in uneven baking and make the cookies soggy. Consider using a food processor for a finer texture.

When measuring the sugar, be sure to level off the measuring cup for accuracy, as too much sugar can lead to overly sweet cookies that won't hold their shape.

Avoid greasing the cookie sheet too liberally; a light layer of unsalted butter is sufficient. Excess grease can cause the cookies to spread too much during baking, resulting in flat cookies.

Frequently Asked Questions

What can I use instead of sugar in this delicious pineapple kisses recipe?

You can substitute sugar with honey or agave syrup, but note that this may alter the texture and sweetness level of the final product. You can also use a sugar substitute like stevia or erythritol, keeping in mind the conversion ratio as specified on the product packaging.

How should I store the delicious pineapple kisses after making them?

After forming the pineapple kisses and allowing them to set, store them in an airtight container in the refrigerator for up to one week. Ensure they are placed in a single layer to prevent sticking.

What should I do if the pineapple mixture doesn’t thicken properly?

If the mixture doesn’t thicken, continue to cook it over medium heat while stirring frequently. If it's still too runny after 10-15 minutes, you can add a tablespoon of cornstarch mixed with a little water to the mixture and cook for a few more minutes until it thickens.

Recommended Drink Pairings

  • Pineapple Mojito: The refreshing mint and lime in this cocktail complement the sweetness of the pineapple.
  • Coconut Water: Its natural sweetness and lightness balance the richness of the cookies.
  • Chardonnay: A chilled glass of this white wine enhances the tropical notes of the pineapple.
  • Iced Green Tea: The subtle bitterness of green tea provides a nice contrast to the sweetness of the dessert.
  • Ginger Ale: The spiciness of ginger adds a refreshing kick that pairs well with the cookies.

Directions

  1. Grease a rimmed cookie sheet with unsalted butter. Reserve.
  2. Combine the pineapple and sugar in a medium saucepan. Heat over medium heat, stirring constantly, until the sugar dissolves and the mixture thickens sufficiently to pull away from the bottom of the pan. Remove from heat and let cool slightly.
  3. When partially cooled, spread the pineapple mixture in the cookie sheet, and let cool completely.
  4. When the pineapple is completely cool, using buttered hands, form the mixture into 20 small round balls. Fill a small mixing bowl with granulated sugar, and roll each ball in the sugar to completely cover. Place the completed balls back on the greased cookie sheet and let stand for several hours.
  5. Serve in small paper cups, decorated with a sprig of mint if desired.
