Recipe Tips

When cooking mussels, always discard any that remain open after cooking. This indicates they were not alive before cooking and may not be safe to eat.
For a deeper flavor, consider adding a pinch of red pepper flakes along with the garlic. This will give the stew a subtle heat that complements the chouriço well.
Avoid overcooking the shrimp; they only need about 2-3 minutes in the stew after adding them. Overcooked shrimp can become tough and rubbery, ruining the dish's texture.

Frequently Asked Questions

What can I use as a substitute for chouriço?

If you don't have chouriço, you can substitute it with other types of cured sausages like chorizo, andouille, or kielbasa for a similar flavor profile. If you're looking for a non-meat option, consider using smoked paprika or a vegetarian sausage to add depth and flavor.

How should I store leftover mussels and shrimp stew?

To store leftover mussels and shrimp stew, allow it to cool completely, then transfer it to an airtight container. It can be refrigerated for up to 3 days. When reheating, make sure to heat it until it’s steaming hot to ensure food safety. Note that reheating may change the texture of the seafood.

What if some mussels don’t open during cooking?

If any mussels remain unopened after cooking, it’s best to discard them as they may not be safe to eat. Mussels that do not open indicate that they were either dead before cooking or not cooked properly.

Recommended Drink Pairings

Wine

Portuguese: Vinho Verde - This refreshing white wine has bright acidity and citrus notes that complement the seafood and chouriço beautifully.

General: Sauvignon Blanc - With its zesty acidity and herbal undertones, Sauvignon Blanc enhances the flavors of the mussels and shrimp while balancing the richness of the olive oil.

Beer

Portuguese: Super Bock - This pale lager is crisp and light, making it an excellent match for the savory and briny elements of the seafood stew.

General: Pilsner - A classic Pilsner offers a clean, refreshing taste that pairs well with the dish's richness and enhances the seafood flavors.

Other Beverages

White Tea: Its delicate and floral notes provide a soothing contrast to the robust flavors of the stew, making for a harmonious pairing.

Really good. I substituted Polish sausage, which is what I had, but added hot chile-garlic paste, Cajun seasoning, and lots of smoked paprika to try to approximate the seasonings in Portuguese chorizo. Because I was using shucked, frozen mussels which were cooked, I added them at the end as the shrimp was about done and continued simmering just until everything was pleasantly hot. I served with crusty French baguette and Italian green beans.

Little changes but was delicious - used 2 cups of wine, added onion, doubled garlic, used a tin of chopped toms and doubled mussels

It was good, but I think it needed tweaking.
I'd love to know what others have done.
I think it needed onions, less tomato paste, less wine. More garlic! 😀
Any thoughts?
