Ingredients

For piri piri seasoning:1 teaspoon salt1 teaspoon oregano1 teaspoon paprika1 teaspoon cayenne pepper1 teaspoon black pepper1 teaspoon garlic powder1 teaspoon cumin2 tablespoon canola oil1 cup rice1 chicken stock cube½ yellow bell pepper½ red bell pepper1 crushed garlic clove

Directions

  1. Mix all the ingredients for the piripiri seasoning
  2. Fry the rice in canola oil and the piripiri seasoning until lightly toasted.
  3. Add 2 cups hot water and a stock cube, bring to boil and reduce heat. Cook rice until it is light and fluffy.
  4. While the rice is cooking sauté chopped bell peppers and garlic with some more piripiri seasoning.
  5. Add the cooked rice and sauté until well blended.

 

Recipe Tips

For enhanced flavor, toast the uncooked rice in the canola oil for 2-3 minutes before adding the chicken stock and water. This will give the rice a nuttier taste and improve the overall aroma of the dish.
Be careful not to overcrowd the pan when adding the bell peppers. If they are too crowded, they will steam instead of sauté, which can prevent them from caramelizing and developing a rich flavor. Consider sautéing them separately if your pan is small.
