Ingredients

2 tablespoons (28g) butter3 lbs (1.36kg) mussels1 cup (150g) ground Portuguese chouriço1/2 large (150g) onion, sliced4 cloves (12g) garlic, minced1/2 medium (60g) green pepper, sliced1/2 medium (60g) red pepper, sliced1/2 cup (120ml) white wine

Directions

  1. Clean and de-beard the mussels, and then set aside.
  2. Set a 2-quart saucepan over medium-high heat, add 2 tablespoons (28g) of the butter to melt.
  3. Add the chouriço and cook for about 1 minute.
  4. Add the onions, garlic, green peppers and red peppers, and saute for 1 minute.
  5. Add the wine and 1/2 cup (120ml) of water, and stir.
  6. Add the mussels and cover; cook until the mussels open, about 4 to 5 minutes.
  7. Remove the saucepan from the heat, transfer the mussels to a large bowl, then spoon the cooking liquid with the onions, peppers and chouriço over the top.
  8. Serve the bowl of mussels with bread.
