Recipe Tips

Ensure to marinate the pork loin for at least 2 hours or overnight with olive oil, mustard, honey, garlic, and herbs to enhance the flavor. A longer marination time allows the flavors to penetrate deeper into the meat.
When preparing the potatoes, cut them into uniform pieces to ensure they cook evenly. Consider parboiling them for 5-10 minutes before roasting to give them a head start, which will result in a perfectly crispy exterior and fluffy interior.
Avoid overcooking the pork loin; use a meat thermometer to check for doneness. The ideal internal temperature for pork loin is 145°F (63°C). Let it rest for 10-15 minutes after roasting to allow the juices to redistribute, ensuring a moist and tender roast.

Frequently Asked Questions

Can I substitute the pork loin with another type of meat?

Yes, you can substitute the pork loin with chicken breast or a beef roast. However, cooking times may vary. Chicken breasts will require less time to cook, while beef may take longer depending on the cut.

How should I store the leftovers from this recipe?

Allow the leftovers to cool completely, then store them in an airtight container in the refrigerator for up to 3-4 days. You can also freeze the meat and cooked vegetables for longer storage, up to 3 months.

What should I do if my pork loin is dry after baking?

If the pork loin ends up dry, you can serve it with a sauce made from the leftover pan juices mixed with a little broth or water. To prevent this in the future, consider using a meat thermometer to ensure it reaches an internal temperature of 145°F (63°C) without overcooking.
