With all your ingredients and equipment gathered, you are ready to get started!

Directions

  1. Slice off a small “lid” from the top of the bread and set it aside.
  2. Carefully remove the soft inner bread (crumb), tearing it into small pieces. Cover with plastic wrap to prevent it from drying out.
  3. In a large bowl, combine the finely chopped onion, shredded cheeses, diced flamengo, chouriço, and bacon (cut into small ¼-inch / 0.5 cm pieces).
  4. Add the mayonnaise, vinegar or lemon juice, and mustard.
  5. Mix everything very well using a spoon until combined.
  6. Fill the hollowed bread loaf with the mixture. Cover with aluminum foil and bake in a preheated oven at 340°F (170°C) for about 1 hour.
  7. Occasionally check and stir the filling with a fork to ensure it melts evenly.
  8. About 10 minutes before removing from the oven, remove the foil and place the “lid” of the bread back on top to crisp.
  9. Serve warm, with the reserved bread pieces or with toast on the side.

Tips & Variations

- When hollowing out the rustic bread loaf, be careful not to cut through the bottom or sides too much, as this can cause the filling to leak out during baking. Use your hands to gently pull out the bread, creating a hollow space while keeping the walls thick enough to hold the stuffing.
- For added flavor, consider sautéing the chopped onion in a bit of oil or butter before mixing it with the other filling ingredients. This will caramelize the onions and enhance their sweetness, resulting in a richer taste in the final dish.
- Avoid overstuffing the bread with the filling mixture. While it may be tempting to pack in as much cheese and meat as possible, overstuffing can lead to uneven cooking and a soggy bottom. Instead, aim for a balanced amount that allows for even baking and a nice crust.

Frequently Asked Questions

Can I substitute the chouriço sausage with another type of sausage?

Yes, you can substitute chouriço with any other type of sausage that you prefer, such as kielbasa, andouille, or even Italian sausage. Just make sure to adjust the seasoning according to your taste.

How should I store leftover stuffed bread?

Leftover stuffed bread can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, wrap it in aluminum foil and place it in a preheated oven at 350°F (175°C) for about 15-20 minutes, or until warmed through.

What can I do if my bread becomes too soggy after baking?

To prevent sogginess, make sure to bake the bread long enough and let it cool slightly before serving. You can also toast the inner bread pieces to accompany the stuffed bread, adding crunch and counteracting any sogginess.

Recommended Drink Pairings

Wine

Portuguese: Vinho Verde - This refreshing, slightly effervescent wine complements the richness of the cheeses and meats in the dish.

Beer

Portuguese: Super Bock - This popular lager has a light, crisp taste that pairs well with the hearty ingredients of the stuffed bread.

General: Pilsner - A classic Pilsner offers a refreshing profile that enhances the flavors without overpowering the dish.

Other Beverages

Coffee: A rich, dark roast coffee provides a contrasting bitterness that complements the savory elements of the stuffed bread.
