Ingredients

8 slices of pork belly (each about 3 to 4 mm thick)4 cloves garlic, minced3 tablespoons olive oil1 tablespoon sweet paprika1/2 cup of dry white wine (just about 150 ml)Juice of 1 lemonSalt and pepper (to taste)2 bunches of kale2 cloves garlic, minced4 tablespoons olive oilSalt and pepper (to taste)

Directions

  1. Season the pork belly with salt, pepper, minced garlic, paprika, white wine, and lemon juice and set aside for about an hour or a little longer.
  2. Heat a grill. Once hot, cook the slices of pork belly until golden and crispy on both sides, and place 2 slices per plate.
  3. Bring a pot of water with salt to a boil.
  4. Add the kale and cook for 5 minutes.
  5. Once done, drain well and set aside.
  6. In a skillet, heat the olive oil and sauté the garlic until fragrant.
  7. Add the kale and cook for about 5 minutes, stirring it a few times with a wooden spoon.
  8. Season the kale with salt and pepper to taste.
  9. Divide the kale between the 4 plates (with the slices of pork belly already on them).
  10. Enjoy with a good glass of wine.
