Directions
Please don't use "active dry yeast" for this recipe, only "instant dry yeast".
- In a large bowl, combine the flour, yeast, salt, and sugar.
- Mix well so the yeast distributes evenly for consistent rising.
- Slowly stir in the warm water using a spoon or spatula until you get a wet, shaggy dough. No kneading needed!
- Lightly dust the surface of the dough with flour, cover the bowl with plastic wrap, and let it rise until doubled in size — about 1 to 2 hours depending on room temperature.
- When the dough is nearly ready, preheat the oven to 425°F (220°C) and place the empty cast iron pot (without lid) inside to heat. This step is key for a crisp crust.
- Line a bowl with floured parchment paper and gently transfer the risen dough onto it. Dust with more flour for that rustic, artisan look.
- Carefully remove the hot Dutch oven from the oven. Lift the parchment paper with the dough and place it inside the pot.
- Cover with the lid (remove any plastic handle beforehand) and bake for 45 minutes.
Recipe Tips
- Ensure your water is at the correct temperature (about 100°F / 38°C) for activating the yeast; using water that is too hot can kill the yeast, while too cool won't activate it properly. Use a kitchen thermometer for accuracy.
- When mixing the dough, avoid over-mixing; just combine the ingredients until there are no dry spots. This will help develop the gluten slowly and give your bread a better texture and flavor.
- For a crustier bread, place a pan with water in the oven while baking to create steam. This helps to achieve that desirable crispy crust on your artisan bread.

Frequently Asked Questions
Can I substitute bread flour with all-purpose flour in this recipe?
While bread flour is recommended for its higher protein content which helps in gluten development, you can substitute all-purpose flour. The texture may be slightly different, resulting in a softer crust, and you may need to adjust the water as all-purpose flour absorbs moisture differently.
How do I store the leftover artisan bread to keep it fresh?
To keep leftover artisan bread fresh, store it in a paper bag at room temperature for up to 2 days. For longer storage, wrap it tightly in plastic wrap or aluminum foil and freeze it for up to 3 months. To serve, thaw at room temperature and reheat in the oven for a few minutes to restore its crust.
What should I do if my dough doesn’t rise properly?
If your dough doesn’t rise, it could be due to using old yeast or water that was too hot or too cold. Ensure your yeast is fresh and activated properly, and check that the water temperature is around 100°F (38°C). If the dough still doesn’t rise, you could let it rest in a warmer location or increase the rise time.
