Ingredients

1 round and crusty Portuguese bread loaf (16 oz / 450 g)2 onions, finely chopped9 oz (250 g) peeled shrimp3.5 oz (100 g) chopped bacon3.5 oz (100 g) shredded cheese (cheddar, mozzarella, or mix)7 fl oz (200 ml) mayonnaise2 tbsp (30 ml) chopped fresh corianderSalt, black pepper, and garlic powder, to taste

Directions

  1. Preheat the oven to 350°F (180°C).
  2. Slice off the top of the bread to create a lid.
  3. Carefully remove the inside crumb without piercing the crust.
  4. Cut the removed bread crumb into bite-sized cubes.
  5. In a mixing bowl, combine the onions, shrimp, bacon, shredded cheese, mayonnaise, and coriander.
  6. Season with salt, pepper, and garlic powder to taste.
  7. Fill the hollowed bread with the prepared mixture.
  8. Place the bread on a shallow baking tray, cover with aluminum foil, and bake for 30 minutes.
  9. Remove the bread from the oven and discard the foil.
  10. Place the bread lid back on top.
  11. Arrange the bread cubes around the loaf and return to the oven, using the broiler setting, for about 5 minutes or until golden.
  12. Serve immediately while warm, using the toasted bread cubes for dipping into the creamy filling.
