Directions

  1. Just before cooking, rinse the mussels in a bowl with water and salt to help release the sand. Wash them thoroughly.
  2. In a large pot, heat olive oil and sauté the chopped onion and garlic until they turn translucent.
  3. Add the tomato paste and a bit of the tomato passata. Let it cook for a few minutes.
  4. Pour in water and bring to a boil. Add the pasta and season with salt and garlic powder.
  5. When the pasta is nearly cooked, add the mussels, shrimp, and crab meat. Stir everything together.
  6. Add more water if needed for extra sauce. Taste and adjust seasoning.
  7. Serve hot, garnished with chopped coriander or parsley.

Recipe Tips

- When cooking the pasta, make sure to salt the water generously; it should taste like the sea. This is crucial for enhancing the flavor of the pasta itself, which will absorb some of the saltiness as it cooks.

- To prevent the mussels from being gritty, soak them in cold water with a little cornmeal for about 30 minutes before cooking. This helps them expel any sand they may have inside, ensuring a clean and enjoyable dish.

- Avoid overcooking the seafood by adding the shrimp and crab meat only during the last 3-5 minutes of cooking. They cook quickly, and overcooking can result in a rubbery texture that detracts from the creamy sauce.
