Directions

  1. Preheat your oven to 350°F (180°C).
  2. Grease the cake pan with butter or margarine and dust it with flour.
  3. Separate the egg yolks from the whites.
  4. Beat the egg whites until stiff peaks form, gradually add the sugar while continuing to beat until the mixture is very firm and glossy.
  5. Add the egg yolks, oil, pudding mix, and pineapple juice and beat for another 10 minutes.
  6. Sift in the flour and gently fold it into the mixture until just combined.
  7. Pour the batter into the prepared cake pan and bake for about 20 minutes, or until a toothpick inserted in the center comes out clean (baking time may vary depending on your oven).

To make the glaze:

  1. While the cake cools slightly, combine the powdered sugar, pineapple juice, and butter in a small saucepan.
  2. Heat gently over low heat, stirring constantly, until the butter melts and the glaze is smooth.
  3. Use a skewer or toothpick to poke holes all over the warm cake while it’s still in the pan.
  4. Slowly pour the warm glaze over the cake so it soaks in.
  5. Let the cake cool almost completely before unmolding.

Recipe Tips

Ensure your eggs are at room temperature before mixing; this helps to create a lighter, fluffier cake as they incorporate more air into the batter.
For a more intense pineapple flavor, consider adding some crushed pineapple (drained) to the batter along with the pineapple juice and pudding mix, but reduce the liquid slightly to maintain the right consistency.
Avoid overmixing the batter once you add the dry ingredients; overmixing can lead to a dense cake. Mix just until you no longer see dry flour for the best texture.

Frequently Asked Questions

What can I use as a substitute for cake flour in this recipe?

You can make your own cake flour by combining all-purpose flour and cornstarch. For every cup of cake flour needed, use 1 cup of all-purpose flour and remove 2 tablespoons. Then add 2 tablespoons of cornstarch, whisk them together, and sift. This will yield a lighter texture similar to cake flour.

How should I store the leftover Pineapple Glazed Cake?

Store the leftover cake in an airtight container at room temperature for up to 2 days. If you want to keep it longer, you can refrigerate it for up to a week. To maintain the glaze's texture, wrap the cake tightly if refrigerating. For longer-term storage, you can freeze the cake for up to 3 months; just ensure it's well-wrapped to prevent freezer burn.

What should I do if my cake doesn't rise properly?

If your cake doesn’t rise, it could be due to overmixing the batter after adding the flour, which can lead to a denser cake. Ensure you gently fold in the flour until just combined. Also, check that your baking powder is fresh and that the oven is preheated properly. Avoid opening the oven door too often while the cake is baking, as this can cause it to collapse.

Recommended Drink Pairings

Wine

Portuguese: Vinho Verde - This light and refreshing wine complements the sweetness of the pineapple and the cake's texture.

General: Riesling - A slightly sweet Riesling enhances the tropical flavors while balancing the cake's richness.

Beer

Portuguese: Super Bock - This pale lager offers a crisp, clean finish that pairs well with the sweetness of the cake.

General: Belgian Witbier - The citrus and spice notes of a Witbier beautifully complement the pineapple's freshness.

Other Beverages

Pineapple Juice: Fresh pineapple juice enhances the cake's flavor profile and adds a refreshing touch.
