  3. In a springform pan, place a layer of crushed biscuits and level it, then cover with a layer of cream.
  4. Repeat the layers, always leveling with a spatula.
  5. The last layer should be crushed biscuits.
  6. Refrigerate overnight.
  7. Remove the springform ring and sprinkle the sides with grated biscuits.

Additional Notes:

Maria biscuits are a type of plain, round, and slightly sweet cookie common in Portugal and Brazil. If you can't find them, you can substitute with graham crackers or other similar plain cookies.

Recipe Tips

When whipping the cream, ensure that both the bowl and the beaters are chilled for at least 15 minutes beforehand. This helps achieve a better volume and stability in the whipped cream.
For added flavor, consider infusing the whipping cream with vanilla extract or a splash of coffee before whipping. This will enhance the overall taste of the cake without overpowering the delicate sweetness of the condensed milk.
Avoid over-soaking the Maria biscuits in any liquid, as they can become too soggy and lose their structure. A quick dip in milk or coffee should suffice, allowing them to soften without disintegrating.

Frequently Asked Questions

Can I use a different type of cookie instead of Maria biscuits?

Yes, you can substitute Maria biscuits with graham crackers, digestive biscuits, or any other plain, slightly sweet cookies. The texture and flavor may vary slightly, but the cake will still be delicious.

How should I store the Maria Biscuits and Cream Cake?

Store the cake in the refrigerator, covered with plastic wrap or in an airtight container. It will keep well for up to 3-4 days. Make sure to eat it chilled for the best texture and flavor.

What should I do if the whipped cream doesn't whip to stiff peaks?

Ensure that the whipping cream is very cold, as it whips better when chilled. Also, make sure you are using heavy cream (35% fat) for best results. If it still doesn't whip well, you can try adding a stabilized whipped cream powder or a little bit of powdered sugar to help it hold its shape.

Recommended Drink Pairings

Wine

Portuguese: Vinho Verde - This light and slightly effervescent wine offers a refreshing contrast to the rich creaminess of the cake.

General: Moscato - The sweet and fruity notes of Moscato complement the sweetness of the condensed milk and cream beautifully.

Beer

Portuguese: Super Bock - This classic lager has a crisp finish that balances the sweetness of the cake without overpowering it.

General: Witbier - A wheat beer with citrus and spice notes, it pairs well with desserts and enhances the flavors of the cake.

Other Beverages

Coffee: A smooth, slightly bitter coffee provides a nice contrast to the sweetness of the cake and enhances its flavors.
