7 tablespoons (1/2 cup + 1 tbsp) butter (unsalted), softened3/4 cup + 2 tablespoons sugar14 oz ricotta cheese6 medium eggsLemon zest (to taste)1 1/4 cups all-purpose flour1 teaspoon baking powderGround cinnamon (to taste)Butter for greasing the panPowdered sugar for dusting
Directions
- Preheat the oven to 350°F (180°C).
- Grease a cake pan with butter and set aside.
- In a bowl, mix the butter and sugar, beating well until smooth.
- Add the ricotta cheese, lemon zest, and eggs.
- Beat everything together until well combined.
- Add the baking powder and flour, then mix again until smooth.
- Finally, add ground cinnamon and gently fold it into the batter.
- Pour the mixture into the prepared cake pan and bake for about 45 minutes.
- Check if it’s done by inserting a toothpick into the center—if it comes out clean, it’s ready.
- Remove from the oven, let it cool, and serve dusted with powdered sugar.
