Ingredients
2 tbsp (30g) butter3.5 oz (100g) 70% dark chocolate2 teaspoons instant coffee4 eggs3.5 fl oz (100ml) 35% whipping cream1/3 cup (80g) sugar
Directions
- Melt the butter with the chocolate.
- Add the coffee and mix well.
- Stir in the egg yolks, incorporate well, and refrigerate.
- In a separate bowl, beat the egg whites until stiff peaks form, gradually adding half of the sugar.
- Whip the heavy cream with the remaining sugar until soft peaks form.
- Gently fold the beaten egg whites into the chocolate-coffee mixture.
- Carefully incorporate the whipped cream.
- Divide the mousse into serving cups and refrigerate for at least 4 hours or overnight.
