1.1 lbs (500 g) pork, cut into cubes1.75 lbs (800 g) potatoes for frying 6 tbsp olive oil1 tbsp pork lard2 bay leaves4 garlic cloves, minced3/4 cup (7 fl oz / 200 ml) white or red wine2 tbsp sweet red pepper pasteSalt and pepper (to taste)1 tbsp chopped pickles1 can (about 7-10 oz / 200-300 g) whole mushrooms, drained

Directions

  1. Season the pork with salt, pepper, garlic, red pepper paste, wine, and broken bay leaves. Let it marinate overnight.
  2. The next day, cut the potatoes into cubes and fry them in oil until golden.
  3. In a large pot, heat the olive oil and lard. Add the pork (without the marinade) and cook until most of the liquid has evaporated, about 20 minutes.
  4. Add the drained mushrooms, stir, then pour in the reserved marinade. Cover and let simmer for 25 minutes, or until the meat is tender and most of the liquid has reduced.
  5. Lower the heat to a minimum, add the fried potatoes, and mix well.
  6. Stir in the chopped pickles, mix everything, and serve immediately.
