2 large pieces of soaked codfish (salt cod)1.3 lbs (600 grams) of parboiled potatoes, sliced into rounds1 red bell pepper, sliced into strips (optional)1 large onion, sliced into rings3 garlic cloves, thinly sliced1 ripe tomato, sliced3.4 fl oz of extra virgin olive oil3 bay leaves3.4 fl oz of white wineSalt to tasteOlives for garnish

Directions

  1. In a pot, heat the olive oil.
  2. Add the onion, garlic, bell pepper, and bay leaves.
  3. Season lightly with salt and sauté until the onion softens.

  5. Deglaze with white wine and let it simmer for 2 more minutes.

  9. Bake in a preheated oven at 350°F (180°C) for 25 minutes.
