Directions

  1. In a large bowl, add the flour and make a well in the center.
  2. Add the instant dry yeast, sugar, oil, and warm water into the well.
  3. Mix all the ingredients well, then add the salt and beat vigorously.
  4. Sprinkle a surface with flour and knead the dough until it forms an elastic ball.
  5. Place the dough in a flour-dusted bowl, cover, and let it rise for 30 minutes or until it doubles in size.
  6. Slice the chouriço into thin slices and set aside.
  7. On a floured surface, roll out the dough.
  8. Cut the dough in half, then divide each half into 6 equal parts, making 12 rolls in total.
  9. Shape each piece into a fist-sized ball.
  10. For each ball, stretch the dough, place chouriço slices on top, dampen the edges with water, roll up, and seal the dough around the chouriço.
  11. Place each roll on a baking sheet lined with parchment paper.
  12. Dust with flour and make three slashes on each roll.
  13. Let them rise for about 1 hour.
  14. Preheat the oven to 350°F (180°C).
  15. Bake for about 30 minutes, or until the rolls are cooked through.
  16. Please note: This recipe uses "instant" dry yeast, not "active" dry yeast.

Recipe Tips

When mixing the dough, make sure the warm water is between 100°F to 110°F (37°C to 43°C) to properly activate the instant dry yeast. Too hot or too cold water can hinder yeast activation and affect the rise of your rolls.
For a flaky pastry texture, consider chilling the dough for at least 30 minutes before rolling it out. This will help to relax the gluten and create a more tender dough, resulting in better texture in your sausage rolls.
Avoid overworking the dough once the flour is added. Knead just until the ingredients are combined and the dough is smooth; excessive kneading can develop gluten too much, leading to tough rolls instead of light and flaky ones.

Frequently Asked Questions

Can I substitute chouriço sausage with another type of sausage?

Yes, you can substitute chouriço with any other type of flavorful sausage, such as spicy Italian sausage or smoked sausage. Just be aware that this may change the flavor profile of the rolls.

How should I store leftover sausage rolls?

Store leftover sausage rolls in an airtight container at room temperature for up to 3 days. For longer storage, you can freeze them for up to 2 months. To reheat, simply warm them in the oven until heated through.

What should I do if my dough isn’t rising?

If your dough doesn't rise, it may be due to inactive yeast. Ensure your yeast is fresh and active by checking the expiration date. Additionally, make sure your warm water isn’t too hot or too cold – it should be around 110°F (43°C). You can also try placing the dough in a warm, draft-free area to help with rising.

Beer

Portuguese: Super Bock - This popular lager has a crisp and refreshing profile that balances the richness of the chouriço sausage.

General: Pale Ale - A balanced Pale Ale with hoppy bitterness enhances the flavors of the sausage while providing a refreshing contrast.

Other Beverages

Espresso: A strong, rich espresso cuts through the savory richness of the sausage rolls, providing a delightful contrast.
