Frequently Asked Questions

What can I use as a substitute for salt cod in this recipe?

You can use fresh cod or other firm white fish as a substitute for salt cod, but be sure to adjust the seasoning, as fresh fish will not have the same salty flavor. Alternatively, you could use canned tuna or salmon, but the texture and flavor will differ.

How should I store leftovers of Bacalhau á Conde de Brito?

Store leftover Bacalhau á Conde de Brito in an airtight container in the refrigerator. It will keep well for up to 3 days. To reheat, place in a preheated oven at 150°C (300°F) until warmed through, or microwave in short intervals.

The potatoes in my dish didn't cook through. What could have gone wrong?

If the potatoes didn't cook through, it may be due to slicing them too thick or not par-cooking them long enough before layering. Ensure the potatoes are cut thinly and consider par-boiling them for a few minutes before layering to ensure they are tender when the dish is finished baking.

Recommended Drink Pairings

General: Pilsner - A refreshing pilsner with its clean taste and slight bitterness can accentuate the flavors of the bacalhau while refreshing the palate.
