Directions

  1. Boil the potatoes with the salted cod.
  2. After cooking, drain everything well.
  3. Clean the salted cod from skins and bones and shred it using your hands.
  4. Mash the cooked poatoes.
  5. In a bowl, combine the potatoes, salted cod, onion, and parsley, mix everything well, and season with pepper.
  6. Add the beaten eggs and knead everything well.
  7. Shape the patties with the help of 2 tablespoons and fry in hot oil.
  8. Serve with a salad.

Recipe Tips

Soak the salted cod in water for at least 24 hours, changing the water every 8 hours to remove excess salt. This will ensure the fritters are not overly salty.
When boiling the potatoes, cut them into uniform pieces to ensure even cooking. Overcooked potatoes can lead to a mushy batter, while undercooked potatoes can make the fritters fall apart.
Avoid overmixing the batter once the ingredients are combined. Overmixing can lead to dense fritters. Aim for a slightly lumpy texture for a lighter, crispier final dish.

Frequently Asked Questions

Can I use fresh cod instead of salted cod for this recipe?

Yes, you can use fresh cod, but you'll need to season it well. Soak the fresh cod in a brine solution for a couple of hours to replicate the saltiness of salted cod, or simply add additional salt while preparing the mixture.

How should I store leftover cod fritters?

Store leftover cod fritters in an airtight container in the refrigerator for up to 3 days. To reheat, place them on a baking sheet in an oven at 350°F (175°C) until warm and crispy again, or pan-fry them briefly.

What if my mixture is too wet to shape into patties?

If the mixture is too wet, try adding a small amount of breadcrumbs or flour to help bind it. You can also let the mixture sit for a few minutes to allow some moisture to evaporate before shaping the patties.

Recommended Drink Pairings

I also add some cornstarch just to mold my cod mix. When I fry the cod mix it's crispy on the outside soft on the inside.
