Directions

  1. Combine 1 tablespoon (8g) flour, 1 teaspoon (4g) sugar, 1 tablespoon (9g) yeast, and 1/2 cup (120ml) lukewarm water in a small bowl, stirring gently to let sit for 10 minutes until wonderfully foamy and activated.
  2. Attach the dough hook to your stand mixer and add the 3 1/2 cups (420g) flour, 1 tablespoon (18g) Kosher salt, 2 tablespoons (28g) melted butter, and the aromatic foamy yeast mixture to the bowl.
  3. Turn the mixer to low-medium speed and gradually pour in 1 cup (240ml) of lukewarm water, mixing for 2 minutes to perfectly incorporate the beautiful dough.
  4. Scrape down the sides and bottom of the bowl with a spatula to ensure absolutely no dry pockets remain.
  5. Increase the speed to medium and knead for 5 minutes until the dough becomes a slightly sticky but wonderfully cohesive mass.
  6. Lightly dust a large bowl with flour, shape the dough into a smooth ball, place it in the bowl, and cover securely with a clean tea towel to let rise in a warm, draft-free spot for 1 hour or until beautifully doubled in size.
  7. Turn the risen dough onto a floured surface and gently stretch it into a long log before dividing it into 8 equal, pillowy pieces.
  8. Line a baking sheet with parchment paper and dust it lightly with flour.
  9. Shape each piece into a perfectly smooth ball and place them on the prepared tray, leaving 3 to 4 inches of space between each glorious roll.
  10. Cover the rolls with a tea towel and let them rest for a quick 15 minutes.
  11. Dust the rolls and a thin wooden dowel with flour, then press the dowel firmly into the center of each ball to create the traditional deep crease without cutting all the way through.
  12. Cover again and allow the rolls to rise for a final 30 minutes while preheating your oven to 450°F (230°C).
  13. Bake for 20–25 minutes on the middle rack until the crust transforms into a deep golden brown and sounds wonderfully hollow when tapped.
  14. Transfer to a wire rack to cool slightly before serving warm with a generous smear of butter.

Recipe Tips

When activating the yeast, ensure the water is lukewarm (between 100°F and 110°F). Too hot water can kill the yeast, while too cold will not activate it properly. The mixture should become frothy after about 5-10 minutes if the yeast is alive.
To achieve a crustier exterior on your buns, place a pan with hot water at the bottom of your oven while baking. This steam will help create a nice crust. Alternatively, you can mist the buns with water right before baking.
Avoid over-kneading the dough, as this can lead to tough buns. Knead just until the dough is smooth and elastic, which usually takes about 8-10 minutes. If the dough is too sticky, incorporate small amounts of flour gradually, but be cautious not to add too much.

Frequently Asked Questions

Can I substitute active dry yeast with instant yeast in this recipe?

Yes, you can substitute active dry yeast with instant yeast. Use the same amount, and you can incorporate it directly into the flour without activating it first in water. This will save you a couple of minutes.

How should I store leftover Portuguese buns and how long do they last?

Leftover Portuguese buns can be stored at room temperature in an airtight container for up to 2 days. For longer storage, freeze them in a freezer-safe bag for up to 3 months. To use, thaw at room temperature and reheat in the oven.

What should I do if my dough is too wet or too dry?

If your dough is too wet, gradually add a small amount of flour, about a tablespoon at a time, until it reaches the right consistency. Conversely, if the dough is too dry, add water a teaspoon at a time until it becomes slightly sticky but cohesive.

Recommended Drink Pairings

Wine

Portuguese: Vinho Verde - This light and refreshing wine complements the crusty texture of the buns beautifully.

General: Sauvignon Blanc - The crisp acidity and citrus notes in Sauvignon Blanc enhance the flavors of the freshly baked bread.

Beer

Portuguese: Super Bock - This popular Portuguese lager has a light body and mild bitterness that pairs well with bread.

General: Pilsner - The clean and refreshing taste of a Pilsner complements the crusty texture of the buns effectively.

Other Beverages

Espresso: A rich and bold espresso provides a delightful contrast to the lightness of the bread, making for a perfect pairing.
