Ingredients

4 cups of all purpose flour1 3/4 cups granulated sugar1 teaspoon of baking powder1 teaspoon of baking soda4 eggs at room temperature1/2 cup melted butter (unsalted)1/3 cup vegetable oilJuice of 1 lemonZest of 1 lemon

Get Portuguese ingredients

Instructions

  1. In a large bowl, start by combining all the dry ingredients, all purpose flour, sugar, baking powder and baking soda (stir all the dry ingredients).
  2. In the same bowl add the eggs, butter, vegetable oil, lemon juice and lemon zest. 
  3. Form dough by combining all ingredients with your hands and bring dough together until it forms into a rolling consistency. 
  4. Once dough comes together, set it aside for 30 minutes to let the dough rest.
  5. Preheat the oven to 350F of 180C.
  6. Remove a piece of dough and form into a log.
  7. Take small peices from the log and form into a small balls and start rolling each into a thinner log (size to taste) and bring both ends together to form a round circle. (To form the biscoito, press small piece of dough slightly with one hand and then stretch out the dough with 2 hands and form into a thinner log and bring the 2 end pieces together)
  8. Place the formed biscoitos on a baking sheet with parchment paper, or use non stick baking spray.
  9. Place the biscoitos 2 inches apart when placing it on baking tray.
  10. Bake for 12 to 14 minutes. 

TIP:
Start by placing the 1st tray of biscoitos in the bottom rack of the oven.   After 4 minutes, move it up to the middle rack, and after another 4 minutes place on top rack( (if you prefer the biscoitos a dark golden colour leave the top tray in the oven for an additional 2 to 3 minutes)
