1 pound fresh sardines, cleaned and gutted1/4 cup olive oil2 garlic cloves, minced1 lemon, slicedSalt and pepper, to tasteFresh parsley, chopped

Instructions

  1. Preheat the grill to high heat.
  2. In a small bowl, mix together the olive oil and minced garlic.
  3. Season the sardines with salt and pepper, then brush them generously with the garlic oil.
  4. Place the sardines on the grill and cook for 3-4 minutes per side, until they are browned and crispy.
  5. Serve the grilled sardines with a squeeze of fresh lemon juice, a sprinkle of chopped parsley, and additional salt and pepper to taste.
  6. Enjoy with a side of crusty bread and a glass of chilled Vinho Verde or another Portuguese white wine.

Note: This recipe can also be made with other small, whole fish such as mackerel or anchovies.
