- Soak the dry beans the night before.
- Cook the soaked beans in water with the olive oil.
- Once tender, add the remaining ingredients and simmer until the potatoes are tender.
Taste and adjust the seasonings if needed and add more water if required.

Leftover bean soup can be stored in an airtight container in the refrigerator for up to 4 days. You can also freeze it for up to 3 months. When reheating, add a little water if the soup has thickened too much.
