Why You Will Love This Recipe

Get ready to enjoy some seriously tasty portuguese roasted potatoes! They’re packed with smoky flavor and a tangy kick thanks to chouriço fat that turns into a delicious glaze. With a base of sautéed onions and tomatoes, plus a sprinkle of smoked paprika and vinegar, this one-pan meal is all about cozy comfort. Perfect for sharing or just treating yourself, these potatoes are a must-try!

Tips for Success

Soak the cubed potatoes in water for at least 30 minutes before cooking. This helps remove excess starch, resulting in crispier roasted potatoes.

For enhanced flavor, consider adding a splash of olive oil when mixing the potatoes and chouriço with the spices. This helps to create a beautiful golden crust while roasting.

Avoid overcrowding the baking dish. If the potatoes and chouriço are packed too tightly, they will steam instead of roast, leading to a less desirable texture. Use two baking trays if necessary.

Frequently Asked Questions

Can I substitute chouriço sausage with another type of sausage?

Yes, you can substitute chouriço with another type of sausage like chorizo, kielbasa, or even a spicy Italian sausage. Just keep in mind that the flavor profile will change slightly depending on the sausage you choose.

How should I store leftovers of the roasted potatoes with chouriço?

Store leftovers in an airtight container in the refrigerator for up to 3-4 days. To reheat, place in an oven set to 180°C (350°F) until heated through, or you can microwave them until warm.

What should I do if my potatoes aren't crispy after baking?

If your potatoes aren't crispy, try increasing the oven temperature to 200°C (400°F) for the last 20-30 minutes of baking. Also, make sure the potatoes are evenly spread out in the pan and not overcrowded, as this helps them crisp up better.

Recommended Drink Pairings

  • Vinho Verde: This light and crisp Portuguese wine complements the spices and richness of the chouriço.
  • Alvarinho: A white wine with bright acidity that balances the smoky flavors of the dish.
  • Sparkling Water: The carbonation refreshes the palate and enhances the meal's savory elements.
  • Chardonnay: A medium-bodied white wine that pairs well with roasted potatoes and the richness of the sausage.
  • Black Tea: The robust flavor of black tea provides a nice contrast to the dish's spices.

PR, How do you think this would work out in a crockpot? Do you think the potatoes would get too mushy?

In my opinion this is not a good crock pot recipe, and yes because the potatoes would over cook, unless you put them in much later, but I think that defeats the purpose of using a crock pot.
