  2. Lightly grease two baking sheets.
  3. Separate the dough into 2 balls, pull, stretch or use a roller to stretch each pizza dough into a 6-inch round.
  4. Put each piece on a greased baking sheet, then roll out a bit more to a 10- to 12-inch round, about 1/8 inch thick.
  5. Spread 1/2 cup (4 fl oz / 120 ml) of the tomato sauce on each round, leaving a 1-inch border.
  6. Arrange the cheese on top of the sauce and add half of the chouriço on top of each pizza and then hot banana pepper rings to taste.
  7. Bake until the dough is golden brown and the cheese is bubbly, about 20 minutes, switching the pans from top to bottom after 10 minutes.
  8. Serve immediately.

Recipe Tips

- To enhance the flavor of your pizza, try sautéing the sliced chouriço sausage in a pan over medium heat for 3-4 minutes before adding it to the pizza. This will release more oils and spices from the sausage, resulting in a richer taste.

- Avoid soggy pizza by pre-baking the pizza dough for 5-7 minutes at 475°F (245°C) before adding the tomato sauce and toppings. This will create a crispier crust that holds up better against moisture from the sauce.

- If you're looking to balance the heat from the hot banana pepper rings, consider adding a drizzle of honey or a sprinkle of sugar over the top before baking. This will create a sweet-spicy flavor profile that complements the chouriço and peppers.

Frequently Asked Questions

Can I substitute chouriço with a different type of sausage?

Yes, you can substitute chouriço with other types of smoked sausages such as pepperoni, Spanish chorizo, or even Italian sausage if you prefer a milder flavor. Just make sure to slice them thinly for even cooking.

How can I store leftover pizza, and how long will it last?

Store leftover pizza in an airtight container in the refrigerator for up to 3 days. To reheat, you can use an oven for best results or a microwave for quick reheating. If using an oven, preheat to 350°F (175°C) and bake for about 10 minutes until heated through.

What can I do if my pizza dough is too sticky to handle?

If your pizza dough is too sticky, you can lightly flour your hands and the work surface to help manage it. If the dough remains excessively sticky, you can knead in a bit more flour, a tablespoon at a time, until it reaches a workable consistency.

Recommended Drink Pairings

Wine

Portuguese: Douro Red Blend - This wine's bold fruit flavors and a touch of spice complement the smokiness of the chouriço and the heat from the peppers.

General: Chianti - A Chianti's bright acidity and herbal notes enhance the flavors of the tomato sauce and balance the richness of the cheese.

Beer

Portuguese: Sagres Lager - This light, crisp lager is refreshing and pairs well with the spicy and savory elements of the pizza.

General: Pale Ale - A well-balanced Pale Ale with a hint of citrus complements the spices while providing a refreshing contrast to the richness of the cheese.

Other Beverages

Espresso: A shot of espresso offers a rich, bold coffee flavor that can enhance the overall dining experience, especially after a spicy meal.
