With all your ingredients and equipment gathered, you are ready to get started!

Directions

  1. Measure the warm water in a small bowl and sprinkle the yeast on top, set aside and allow the yeast to dissolve and become foamy.
  2. Measure the bread flour into a large bowl and stir in the salt.
  3. Make a hole in the center of the flour mixture, and stir in the dissolved yeast.
  4. Add the cool water, a little at a time, while stirring, just until a stiff, shaggy dough has formed (you may not need to use all of the water).
  5. Cover the bowl with plastic wrap and allow it to rest for 30 minutes.
  6. Transfer the dough to a lightly floured work surface, and gently press it into a rectangle and fold into thirds, turn 90 degrees and repeat.
  7. Place the dough in a large oiled bowl, and cover with plastic wrap.
  8. Allow it to rise in a warm place until doubled in bulk (about 1 to 2 hours).
  9. Divide the dough into 4 equal portions, and shape each one into a long loaf (about 15-inches long and 1 1/2-inches in diameter), with pointed ends.
  10. Place the loaves on a floured towel, cover with oiled plastic wrap, and allow to rise until doubled in bulk (about 30 to 45 minutes).
  11. Preheat the oven to 450°F or 230°C, and place a pan of water on the bottom rack of the oven.
  12. Uncover the baguettes and transfer to lightly greased baking sheet(s).
  13. Sprinkle with flour, and make 4 elongated slashes down each one with a sharp knife.
  14. Bake the breads until crusty and brown (in my oven this takes around 35 to 40 minutes).
  15. The baguettes should give a hollow sound when tapped.

Recipe Tips

Ensure the warm water is between 100°F to 110°F before adding the yeast. If the water is too hot, it can kill the yeast, preventing the dough from rising properly.
When mixing the dough, add the cold water gradually and stop when the dough reaches a slightly tacky consistency. Using too much water can lead to overly sticky dough, making it difficult to shape the baguettes.
Avoid over-kneading the dough. Knead until the dough is smooth and elastic, usually about 8-10 minutes by hand. Over-kneading can result in a dense baguette rather than a light, airy texture.

Frequently Asked Questions

Can I use all-purpose flour instead of bread flour for this baguette recipe?

Yes, you can use all-purpose flour, but the texture of the baguettes may be slightly different. Bread flour has a higher protein content which contributes to a chewier texture and better rise.

How should I store leftover baguettes to keep them fresh?

To keep your baguettes fresh, store them in a paper bag at room temperature for up to 2 days. For longer storage, wrap them tightly in plastic wrap or aluminum foil and freeze. When ready to eat, thaw and reheat in a preheated oven for a few minutes to restore crispness.

What can I do if my dough isn’t rising properly?

If your dough isn't rising as expected, ensure that your yeast is fresh and active. If it's too cold, move it to a warmer area or turn on your oven to a low temperature (around 100°F) for a few minutes to create a warm environment. Additionally, ensure the bowl is covered to retain warmth and moisture.

Recommended Drink Pairings

Wine

Portuguese: Vinho Verde - This light and refreshing wine complements the crusty texture of the baguette while highlighting its subtle flavors.

General: Sauvignon Blanc - The crisp acidity and citrus notes of Sauvignon Blanc enhance the bread's flavors, making it a delightful pairing.

Beer

Portuguese: Super Bock - This popular Portuguese lager offers a balanced flavor that pairs well with the crunchy crust of the baguette.

General: Pilsner - The light and refreshing qualities of a classic Pilsner make it an ideal match for the crusty and airy baguette.

Other Beverages

Coffee: A smooth, medium-roast coffee enhances the enjoyment of a freshly baked baguette, providing a comforting and aromatic experience.
