With all your ingredients and equipment gathered, you are ready to get started!

Directions

  1. Place the whole chouriço sausages in a large saucepan and add the water, making sure the sausages are covered.
  2. Bring to a boil, then reduce the heat and simmer until the sausages are tender, around 30 minutes.
  3. Chop the cooked sausages into large chunks then add to the food processor.
  4. Process the sausages adding some of the broth, as needed, to moisten the mixture.
  5. Depending on the machine you use, the sausages may need to be processed in batches.
  6. Once all of the chouriço has been processed, transfer the mixture to a bowl then start adding the butter.
  7. Add a tablespoon at a time until you reach the consistency you like.
  8. Use as little or as much as you want.
  9. Refrigerate until ready to use.

Recipe Tips

When boiling the chouriço sausages, use only enough water to cover them completely. Too much water can dilute the flavors you want to capture in the spread.
After boiling, allow the sausages to cool slightly before handling. This makes it easier to remove the casings without losing any of the flavorful meat.
Be cautious with the amount of butter you add. Start with the 1/4 cup, and taste the spread before adding more. This will help you achieve the right balance of richness without overpowering the chouriço flavor.

Frequently Asked Questions

Can I substitute chouriço with another type of sausage?

Yes, you can substitute chouriço with other types of flavorful sausages such as Spanish chorizo or Italian spicy sausage. Just be aware that the flavor profile may change slightly depending on the sausage used.

How should I store the chouriço spread, and how long will it last?

The chouriço spread should be stored in an airtight container in the refrigerator. It will last for up to one week. For longer storage, you can freeze the spread in small portions for up to 3 months.

What can I do if my chouriço spread is too thick?

If your chouriço spread is too thick, you can add more of the reserved sausage broth, a little at a time, while processing it until you reach your desired consistency. Alternatively, you can also mix in a bit of olive oil or more butter for a creamier texture.

Recommended Drink Pairings

Wine

Portuguese: Douro Red - This wine's rich fruit notes and smooth tannins complement the savory and spicy flavors of the chouriço beautifully.

General: Malbec - A Malbec offers bold fruit flavors and a hint of spice that pairs well with the richness of the sausage spread.

Beer

Portuguese: Sagres Lager - This refreshing lager has a light body and crisp finish that balances the richness of the chouriço spread.

General: Pilsner - A classic Pilsner's clean, crisp taste enhances the savory elements of the dish without overpowering it.

Other Beverages

Espresso: A strong, rich espresso provides a delightful contrast to the savory flavors, making it an excellent finishing touch.

Deb, you don't need to remove the casings at all, but if you prefer to, do it after the sausages are cooked.
