Tips for Success

Ensure that the grated coconut is unsweetened to maintain the proper balance of sweetness in your cupcakes. Sweetened coconut can make the cupcakes overly sweet and affect the texture.

When incorporating the eggs, make sure they are at room temperature. This helps them blend more easily with the other ingredients and results in a fluffier cupcake.

Avoid overmixing the batter once the dry ingredients are combined with the wet ingredients. Overmixing can lead to dense cupcakes, so mix just until you no longer see dry flour.

Frequently Asked Questions

Can I use a different type of sweetener instead of sugar?

Yes, you can substitute the sugar with alternatives like coconut sugar, honey, or maple syrup. Keep in mind that this may affect the texture and sweetness level, so adjust accordingly.

How should I store leftover coconut cupcakes?

Store any leftover coconut cupcakes in an airtight container at room temperature for up to three days. For longer storage, you can freeze them for up to three months. Make sure to wrap them tightly to prevent freezer burn.

What should I do if my cupcakes don't rise properly?

If your cupcakes don't rise, ensure that your oven is properly preheated before baking. Also, check if your ingredients, especially the egg, are fresh and at room temperature, which helps with rising. Lastly, avoid overmixing the batter, as this can lead to dense cupcakes.

Recommended Drink Pairings

  • Pina Colada: The coconut flavor in the drink complements the grated coconut in the cupcakes.
  • Moscato: This sweet wine enhances the sweetness of the cupcakes without overpowering them.
  • Lemonade: The tartness of lemonade provides a refreshing contrast to the sweetness of the cupcakes.
  • Coconut Water: It mirrors the coconut flavor and adds a hydrating element to the pairing.
  • Vanilla Latte: The coffee's creaminess and vanilla notes pair well with the cupcake's texture and flavor.

They really aren't a cupcake but more of a custard tart which is why they don't get a leavening ingredient. I think it is Americans who have decided to call them a "cupcake"

Although not custard, you are right that are more of a tart then a cupcake, the author named it cupcakes but I will change that to tarts so everyone knows what to expect.

Maria, use to taste, I personally like to use sweet, but the end result will be very sweet, so if you don't want it as sweet, use unsweetened.

Why do these recipes not call for baking soda, or powder? I made the almond cupcakes and they were terrible. Just curious.
