Directions

  1. To a large pot add all of the vegetables, spices, oil and broth.
  2. Add enough cold water to the pot to just cover the vegetables.
  3. Simmer the soup until the vegetables are tender.
  4. With a hand blender, puree the soup on low until creamy and lump free.
  5. Note: If you prefer a vegetarian version, simply substitute a vegetable broth or water.

Recipe Tips

When cutting the butternut squash, make sure to use a sharp knife and apply pressure evenly to avoid slipping. Consider microwaving the squash for 1-2 minutes to soften it slightly before cutting, which makes it easier to handle.
For a creamier texture, blend the soup in batches after cooking. If you prefer a chunkier soup, reserve some of the potato and squash pieces before blending, then stir them back in after pureeing.
Avoid overcooking the potatoes and squash—cook just until they are tender but still hold their shape. Overcooked vegetables can lead to a watery soup and loss of flavor. Check for doneness by piercing with a fork; they should be soft but not falling apart.

Frequently Asked Questions

Can I use a different type of squash instead of butternut squash?

Yes, you can substitute butternut squash with other types of squash such as acorn squash or pumpkin. Each will provide a slightly different flavor and texture, but they will all work well in the soup.

How should I store the leftover soup, and how long will it last?

Store the leftover soup in an airtight container in the refrigerator for up to 3-4 days. If you want to keep it longer, you can freeze it for up to 3 months. Make sure to let it cool completely before transferring it to the freezer.

What can I do if my soup is too thick or too thin?

If your soup is too thick, you can add additional chicken broth or cold water gradually until you reach your desired consistency. If it's too thin, you can simmer it longer to reduce the liquid, or add a few extra chunks of vegetables to thicken it up.

Recommended Drink Pairings

Wine

Portuguese: Vinho Verde - This light and refreshing wine has bright acidity that complements the creamy texture of the soup.

General: Sauvignon Blanc - Its crispness and herbal notes enhance the flavors of the squash and spices in the soup.

Beer

Portuguese: Super Bock - This lager offers a balanced malt profile that pairs well with the rich flavors of the soup.

General: Hefeweizen - The fruity and banana-like esters of this wheat beer complement the sweetness of the butternut squash.

Other Beverages

Herbal Tea: A soothing herbal tea will provide a calming contrast to the warm flavors of the soup.
