  5. Add into a 2 cup baking dish and top with the cheese.

Recipe Tips

When sautéing the onions, make sure to cook them over medium-low heat until they are translucent and sweet, which usually takes about 10-15 minutes. This helps to develop a rich flavor in the dip. Avoid browning them too much, as that can lead to bitter notes.
For added depth of flavor, consider using smoked chouriço or adding a dash of smoked paprika to the mix. This enhances the smoky notes of the sausage and complements the creaminess of the cheese.
Be careful not to overmix the dip after adding the cream cheese and mayonnaise. Mix just until combined to keep the dip creamy rather than gummy. Overmixing can cause the dip to lose its smooth texture.

Frequently Asked Questions

What can I substitute for chouriço in this recipe?

If you can't find chouriço, you can use spicy Italian sausage or chorizo as an alternative. Adjust the seasoning as necessary since different sausages may vary in spice level.

How can I store leftovers of the Portuguese Chouriço Dip?

Store any leftover dip in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave until warmed through before serving again.

Why is my dip not bubbling or browning after baking?

I made this for a get together with a group of non Portuguese people…I brought tortilla chips to scoop up the deliciousness! I swear, it was such a hit that I bet if I had supplied spoons, people would have been eating it by the spoonful! Lol

Sorry, cannot go along with this recipe. Caramelizing the onion is great, but these delicate herb flavors for this long a time will dramatically change (ruin) their flavor. Add these for a few minutes AFTER the onions have caramelized. Just MHO and experience.
