Recipe Tips

To ensure the ribs are tender, marinate them for at least 4 hours, or preferably overnight, in the mixture of lemon juice, orange juice, honey, red wine, and olive oil. This allows the flavors to penetrate the meat and helps break down the tough connective tissues.
When applying the mustard seeds, consider lightly toasting them in a dry skillet over medium heat for 2-3 minutes before adding them to the marinade. This enhances their flavor and adds a delightful nuttiness to the dish.
Avoid overcooking the ribs by checking them a few times during roasting. Use a meat thermometer to ensure they reach an internal temperature of 190°F to 203°F for perfect tenderness, but avoid cooking them past 205°F to prevent them from drying out.
