Directions

  1. Drain the tuna well and mix with the remaining ingredients (not the olive oil).
  2. With the help of two spoons shape the fritters and fry in olive oil or hot oil until golden brown.

Recipe Tips

Ensure the mashed potatoes are well-drained and cooled before mixing them with the other ingredients. Excess moisture can lead to soggy fritters that won't hold together properly.
For extra flavor, consider adding a teaspoon of Dijon mustard or a splash of lemon juice to the mixture. This will enhance the overall taste and brightness of the fritters.
Avoid overcrowding the pan while frying. Fry the fritters in batches to maintain the oil temperature, which is crucial for achieving that delicious crispiness. Overcrowding can make them steam rather than fry.

Frequently Asked Questions

Can I use fresh tuna instead of canned tuna for this recipe?

Yes, you can use fresh tuna! However, make sure to cook the fresh tuna fully before mixing it with the other ingredients. Canned tuna is already cooked, which saves time.

What can I substitute for mashed potatoes if I want to make this recipe lighter?

You can use mashed sweet potatoes or even mashed cauliflower as a lower-carb alternative to regular mashed potatoes. Both will give a slightly different flavor but should work well in the fritters.

How should I store leftover tuna fritters?

Store leftover tuna fritters in an airtight container in the refrigerator for up to 3 days. You can reheat them in a skillet over medium heat or in a toaster oven to maintain their crispiness.

Just made these for lunch and it was very good. Just want to give everyone a heads up to add 1 egg at a time since you made not need the second egg. i used an X-Large egg and it was enough. Had I added the 2nd I would not have been able to shape then with spoons.
