Directions

  1. Mash the bananas with a fork and mix with the 2 tablespoons of sugar and the 1 and 1/2 cups of flour.
  2. Whisk together the milk and the egg, then stir in the banana mixture to form a batter and set aside.
  3. Mix together the cinnamon and sugar to taste in a separate bowl and set aside.
  4. Heat the oil in a deep fryer or saucepan to about 180°C or 350°F (If you use a saucepan, leave on low heat once it reaches the recommended temperature).
  5. Pour 1 and 1/2 tablespoons at a time into the hot oil and fry for about 4 and a half minutes, turning them over while cooking, until they are golden brown.
  6. Drain the sonhos on paper towels and serve dusted with the cinnamon and sugar to taste.

Recipe Tips

Ensure the bananas are ripe but not overly mushy for the best texture. Look for bananas with a few brown spots, as they will provide natural sweetness and flavor without being too soft.
When mixing the batter, do not overmix; combine the wet and dry ingredients until just mixed. Overmixing can lead to a tough texture in the final product. A few lumps are perfectly fine.
Heat the oil to the right temperature (around 350°F or 175°C) before frying. If the oil is not hot enough, the batter will absorb too much oil and become greasy. Use a thermometer or test with a small drop of batter; it should sizzle and float to the top immediately.

Recommended Drink Pairings

Wine

Portuguese: Vinho Verde - This light and slightly effervescent wine has refreshing acidity that complements the sweetness of the bananas and sugar.

General: Moscato - The sweet and fruity notes of Moscato enhance the flavors of the dish while its lightness keeps it from overpowering the dessert.

Beer

Portuguese: Super Bock - This popular lager has a crisp and clean taste that balances the richness of the fried banana dish.

General: Hefeweizen - The fruity and spicy notes of a Hefeweizen beer complement the bananas and cinnamon beautifully.

Other Beverages

Coffee: A smooth and slightly sweet coffee pairs well by providing a warm contrast to the cool sweetness of the dessert.
