Directions

  1. Cook the pasta in water with a little salt (follow directions on the package).
  2. In a skillet, heat the olive oil and combine the chopped onion, chopped garlic, the bay leaf and let it cook until the onion is translucent.
  3. Add the chopped tomatoes and sauté a little.
  4. Add the shrimp and the knorr broth cube and cook until the shrimp is cooked.
  5. Drain the pasta, add it to a casserole dish, add the shrimp and mix very well.

Recipe Tips

When cooking the pasta, make sure to salt the water generously; it should taste like the sea. This will enhance the flavor of the pasta and prevent it from tasting bland.
Avoid overcooking the shrimp by adding them to the pan just as the garlic and onions begin to soften. Shrimp only need about 2-3 minutes to cook through, and they should turn pink and opaque. Overcooking can make them tough.
For added depth of flavor, sauté the onions and garlic in olive oil until they are golden before adding the tomatoes. This will bring out their natural sweetness and create a more complex sauce.

Frequently Asked Questions

Can I substitute fresh shrimp with frozen shrimp in this recipe?

Yes, you can use frozen shrimp as a substitute. Just make sure to thaw them thoroughly before cooking. You can do this by placing them in the refrigerator overnight or running them under cold water for a quicker thaw.

How should I store leftover pasta with shrimp?

Store any leftovers in an airtight container in the refrigerator for up to 2 days. To reheat, you can use the microwave or gently warm it in a skillet. If the pasta seems dry, add a splash of olive oil or water to help moisten it.

What can I use if I don't have a Knorr stock cube?

If you don’t have a Knorr stock cube, you can substitute it with vegetable or chicken broth instead. If you prefer a lighter flavor, you can opt for low-sodium broth, or use the equivalent amount of salt and pepper to season the dish.

Recommended Drink Pairings

Wine

Portuguese: Vinho Verde - This light and refreshing wine complements the seafood and the acidity of the tomatoes beautifully.

General: Sauvignon Blanc - The crisp acidity and citrus notes of Sauvignon Blanc enhance the flavors of the shrimp and balance the richness of the olive oil.

Beer

Portuguese: Super Bock - This lager's light and slightly bitter profile pairs well with the pasta and shrimp, refreshing the palate.

General: Pilsner - A classic Pilsner with its clean and crisp finish complements the dish without overpowering it.

Other Beverages

Lemonade: The bright acidity and sweetness of lemonade provide a refreshing contrast to the savory flavors of the pasta and shrimp dish.
